Add a chocolate covered almond to top off a dozen of your cookies for the holidays. I like Kirkland's Dark Chocolate Covered Almonds, available at Costco!

These yummy cookies made with almond flour are gluten free. Vanilla extract is made with distilled alcohol so no worries if gluten is a concern!


​They are pretty nutritious but don't go crazy and eat the whole dozen! They do stack up much better than many "breakfast bars" for a real food boost!

Optional Ingredients:

1 Tbsp Chia seed

2 Tbsp ground flax seed

1 Tbsp Mangosteen powder

1 Tbsp brewer's yeast

After creaming wet ingredients and eggs add the dry mixture and stir in :


1/2 cup oats,


1 1/2 cup semi sweet or dark chocolate chips (add white chocolate or yogurt chips if you like),


1 1/2 cup chopped nuts of choice : I use walnuts, almonds, pistachio, cashews, Macadamia nuts,

(and pecans if I have some on hand)


2 Tbsp chopped pumpkin seeds

Ingredients:                                               

2 1/2 Cups Almond flour

1 tsp. baking powder

1/2 tsp baking soda

1 tsp sea salt

1/4 tsp cinnamon, 1/4 tsp ginger

Mix dry ingredients together


1/2 cup light brown sugar

1/2 cup organic raw sugar

1/2 cup coconut oil

6 Tbsp organic real butter

(Love Kerrygold butter from pasture grazed cows)

2 tsp vanilla extract

2 room temperature eggs, add eggs into the wet ingredients last


These are a great snack to throw in your dance bag when you need a sweet treat that also packs a good punch of nutrition. I use one cup of sugar (1/2 brown) which gives a good texture without making them too sweet but you can add more if you want a sweeter cookie! I've included a few optional ingredients if you have them on hand. The brewer's yeast does not affect the flavor but adds B vitamins. I use the optional ingredients in smoothies and baked goods for added nutrients and healthy fats so I always have them at hand!

Bake on cookie sheets for 8 to 11 minutes at 350 in a preheated oven.

Cool on a cooling rack allowing cookies to cool briefly on the sheet first so they firm up nicely!
